Super Charlotte’s Bogberry Bonanza for the WIN!

Whether you are training to race in the Alaska Salmon Runs or looking for a winning wild foods recipe, we suspect that Charlotte Westing might have some secret sauce. How does she run a marathon in the morning and then whip-up an award-winning locally-harvested, wild-foods dessert all in one day? We think it could it be the powerful antioxidants in all the berries she stashes away to fuel her highly active lifestyle. And now Charlotte has graciously shared her BOGBERRY BONANZA recipe that won the Taste of Cordova Fabulous Flora category in 2017!

Cookie Base:

1 1/2 C all-purpose flour.
3/4 C Sugar.
3/4 cup softened butter.
Cut the above to coarse crumbs and press into ungreased 9X13 inch pan and Bake at 350 for 15 minutes. Meanwhile…

The Filling:

Combine about 4 cups cranberries (lingonberry or bog berry, NOT high bush) and 1/2 cup pomegranate or orange juice and 2T cornstarch.  Bring to boiling and stir one minute.  Cool 1 minute then pour onto Cookie base prepared above. Finally…

The Topping:

Combine 1/4 C all purpose flour.
1/2 C sugar in the raw (Turbinado) — this is important to get the proper crunch and a bit of brown sugar taste!
3T Butter.
Cut to crumbs that bunch and distribute clumps over the top of the filling.
Bake 20 minutes, cool and cut into small delicious bars.

Optional: Serve with a dollop of fresh Whipped Cream!
